Gonzalo Gout

A native of Mexico City, a graduate of the Culinary Institute of America (CIA), an alum of Pujol (Mexico City) and The Four Seasons (Washington, DC), Gonzalo Gout took the first steps of his professional pilgrimage to New York to serve as the opening General Manager of Chef Enrique Olvera’s Cosme. After learning at the wise hand of Olvera and earning a three-star New York Times review for Cosme, Gout realized this was just the beginning of his New York story. He began to look beyond the dining room floor to the culture of lunch and dinner amidst the hectic day to day schedules of New Yorkers. Moved to bring the quality of the fine dining experience to our daily lives, Gout opened Verde with his lifelong friend Alejandro Porteny.


Alejandro Porteny

Alejandro found his way to the restaurant business by way of innovative restaurant technology. After studying business in Boston, he helped create an operating system for the hospitality space, Leaf. When his company was acquired in 2014 Alejandro moved to New York to pursue his passion for hospitality. He attended the International Culinary Center (ICC) and New York University’s Tisch Center for Hospitality before teaming with childhood friend Gonzalo Gout to create Verde.


Mariana Villegas

Verde's Chef de Cuisine Mariana Villegas earned her culinary stripes in some of North America's finest kitchens after graduating from the Culinary Institute of America. From Chef Paul Kahan’s Blackbird to Danny Meyer’s Union Square Cafe to Enrique Olvera's Pujol, Mariana has long been working with fine ingredients and flavors. While at Pujol Chef Olvera asked Mariana to be part of a new project--New York's Cosme--and she relocated to New York in spring of 2014 to act as Chef de Cuisine and then as Kitchen Manager at the monumental restaurant. During her tenure at Cosme the restaurant earned three stars from the New York Times and was named 'Best Restaurant of the Year' by Eater. In December 2017 Mariana began working as opening Chef de Cuisine at Verde with the intent of re-defining the conversation between convenience and quality in New York City.



The Verde partners worked closely with The MP Shift design studio to create the fresh and calm interior of Verde.
